For my Cinnamon Cookies (Gluten Free) I only use freshly ground Almonds and freshly ground Ceylon Cinnamon, which has low Coumarin levels. The Zimtsternle (as featured in the New York Times 12/16) are one of the major cookies not to be missed on any Christmas cookie platter.
